About us, chocolatier in Paris and Pontault-Combault
As a chocolatier who graduated from the international school 'Le Cordon Bleu Paris' in 1999, I have worked in prestigious pastry shops and chocolate shops as a pastry chef - chocolatier. At Makdamia, we create superior confectionery and chocolates with careful attention to detail and quality. Our production is made from natural raw materials, without artificial flavors. Our commitment to craftsmanship is reflected in our 'bean to bar' process, where we make our own chocolate from beans, cocoa butter, and organic fair-trade cane sugar from Peru.
Our chocolates are carefully made by our artisan chocolatiers
Our ganache interiors are made from dark chocolate with a minimum of 72% cocoa butter, and our shells also contain at least 72% cocoa butter. We are proud of our homemade pralines, with carefully selected dried fruits, roasted to the core and then ground the old-fashioned way with a millstone to preserve and develop all the aromas. We also offer vegan chocolates.
Our commitments as passionate chocolatiers
At Makdamia, we carefully choose our raw materials: proud of our beans, cocoa butter and organic fair trade cane sugar from Peru, nothing but fruit pulp, organic vanilla powder from Madagascar, vanilla pods from Madagascar, hazelnuts from Piedmont PGI (Italy), organic fair trade coffee beans from Colombia, pistachios and almonds from Sicily.... Our colorings are natural, based on fruits, spices, vegetables and plants.
